I had so much fun making these last week, changing my mum's original recipe to my gluten free version.
So you’ll never have to feel bad about eating cookies, they are gluten free and totally suitable for vegans!
They have crunchy texture and they are so easy to make !!!!
2 flax egg ( 2 tbs milled flaxseed and 6 tbs filtered water)
1/2 cup of coconut sugar
1/2 tsp vanilla powder
1/2 tsp gluten free baking powder
1/2 tsp gluten free soda
1 cup all purpose gluten free flour
2 tbs coconut oil
1/4 cup of non dairy milk
2-3 tbs peanut butter
1.Preheat the oven to 170C fan/gas 5. Line baking tray with non-stick baking paper.2. Put all the ingredients in a bowl and mix until the dough appears completely combined.3. Cover with a tea towel and keep in warm place for 10 minutes.4. Roll into balls, place about 5cm apart on the tray, and flatten slightly with your fingers.
