Scrambled eggs with tomatoes gluten free clean eating

Whole day long I was wondering what should I have for dinner and then the memories of my grandmother making scrambled eggs with fresh tomatoes from the garden made me feel hungry for it. So I made it for dinner, easy and delicious.

Ingredients 

2 medium eggs 
3 small tomatoes, or one large 
1 tablespoon of olive oil, coconut oil or butter 
Salt and pepper 

Method 
Boil the water and soak the tomatoes until skin will start polling. Remove the skin and chop the tomatoes and fry on the medium heat for 3-5 minutes, add eggs and scramble until the are the way you like it. Add salt, black pepper or any spices and enjoy. Ps if you have chives sprinkle on the top
